Beef and Peppers GOODNESS

I grew up with this meal and it remains one of my favorites.  But here is a fun little tidbit: I was a vegetarian before I got married; meat would really upset my stomach.  So generally when I parents served anything with meat, I was very good at hiding it and then dumping it.  Mom, if you're reading this: Sorry, I love you. I ate meat occasionally (who can pass up turkey dinner?)
Anyway, this was one meal that I could eat.  Beef usually made me sick after I ate it.
So here is the recipe so you can make it!!  It is very fast, very easy and it's a one dish meal; just add rice!  It's also very easy to double if you need extra.

You will need:
  • Oil to stir fry in (I use olive oil)
  • 1.5 pounds of beef cut into strips
  • dash of salt and pepper
  • 1 chopped onion
  • minced garlic to taste... maybe 1 tsp.
  • 2 peppers (I find if I use colorful veggies, my kids are more likely to eat, so tonight we used green and yellow)
  • 3 stalks of celery chopped
  • 1 beef boullion cube
  • 3/4 cup of water
  • 1 tbsp corn startch
  • 1 tbsp soy sauce (or to taste)
You need to brown your beef and sprinkle it with salt and peppers.  
Then add you onion, garlic, celery and peppers and stir fry that until the vegetables are tender.
While you are waiting for everything to stir fry go a head a mix you beef cube, water, corn startch and soy sauce together.
When the vegetables and beef are good, pour in the sauce and mix around to allow thickening.
And that is it. When it's thick, it's ready to go.
Serve over hot rice and enjoy!!
